HoiAn by MeVui.

Proper Vietnamese in Canggu without the Bali markup. Banh mi with real baguette crust, pho broth that tastes long-simmered, crispy spring rolls, Vietnamese drip coffee dripping into condensed milk on the side. He's at 9, she's at 8.5.

Worth a visit.

Banh mi was the headline. Real French baguette with a proper crust, charred pork inside, pickled vegetables, fresh coriander. Bread to filling ratio dialed in, every bite balanced. Properly built. Pho came next. Broth was clear and long-simmered, chicken was tender, the rice noodles held their shape, herbs and bean sprouts on the side to dial it in yourself. The fried spring rolls were crispy and not greasy, served with the right nuoc cham and a pile of lettuce and basil to wrap them in. Vietnamese drip coffee on the side, slowly filtering into a glass of condensed milk, gives you something to watch while you eat. Prices are fair, the place is open and breezy, staff genuinely warm. He gave it 9, she gave it 8.5. Coming back regularly.
