Proper Japanese-style ramen room in Bangkok. Broth is dialled in, noodles have the right pull, toppings are clean, and the sake list is short and sharp. Could push the spice and creaminess harder, but the foundation is solid.

Miso Ramen Chikura is a Japanese chain that brought a serious ramen game to Bangkok. Small room, short menu, full focus on the bowl in front of you. The chef stays behind the pass, the kitchen runs quiet, the staff know what they are doing. We went for the miso ramens with sake on the side. Noodles had the right pull, the broth was properly built (long simmer, you can taste it), and the chashu was tender without falling apart. Honest critique: the spicy version could push the heat harder and the creamy versions could push the richness harder. As served, both bowls were very good but slightly polite for the style. Pricing is fair for Bangkok, on the higher end for ramen but cheaper than the equivalent in Tokyo or Singapore. Strong recommend. We will go back to this one next time we are in town.
